To make this granola, I followed a recipe from Cookie and Kate (her recipe made eight cups of granola, but I halved everything, making only four cups). Her website is really cute, and she has a lot of fun ideas. I recommend you check it out!
Here’s what I did to make the granola:
The first thing I did was preheat the oven to 350 degrees.
Next, I set up a (not-so) aesthetic background so my photos wouldn’t look awful...because I’m a professional food blogger hehe
Then, I got out all of the ingredients. This is a good idea because you won’t have to go looking through the cabinets while in the middle of making the recipe.
Next I combined the oats, pecans, cinnamon, and salt in a large bowl. The nuts are optional (don’t add them if you will go into anaphylaxis) but I chose to add them lol.
After that, I stirred in olive oil, maple syrup (honey is also an option), and vanilla.
My following step was adding the golden raisins (any small dried fruit works) and the pepitas. I made a slight mistake here, as the raisins were supposed to be added in after the granola was cooked. This made the raisins become crisp. However, I actually preferred them crunchy rather than chewy, so my mistake happened to work out.
Then I spread an even layer of granola onto a small, parchment paper-covered baking sheet, and put it into the oven.
Halfway through the cooking time I stirred the granola, which was supposed to help clumps to form. I didn’t get a picture of that..whoops.
Then the granola went back into the oven and cooked the rest of the way.
